Ingredients: Organic Rice Flour, Organic Fair Trade Certified Cane Sugar, Baking Powder (made with Organic Ingredients), Xanthan Gum, Organic Cinnamon, Sea Salt, Organic Allspice.
Does Not Contain: Gluten or Trans Fat.
Suggested Use: You will need:
2 Large Eggs
3/4 Cup Water
2 Ripe Medium Bananas
1. Preheat oven to 350 degrees F.
2. Empty contents of package into mixing bowl.
3. Add 2 large eggs, 3/4 cup water, and 2 ripe medium bananas, mashed.
4. Stir just until mixture is evenly moist.
5. Spread batter into greased 9" x 4" loaf pan.
6. Bake for 50 to 60 minutes, until center tests done with a toothpick or knife.
7. Cool for 15 minutes in pan, then remove loaf from pan and finish cooling on rack.
Chef Suggestions:
*Serve warm with butter or cream cheese.
*Replace water with milk for richer flavor.
*Add 1/4 cup chopped nuts or raisins.
Quick and Savvy:
*Substitute 2 ripe medium mangos or papayas for a delicious tropical twist.
*Use Fair Trade and organic ingredients whenever possible.
Alternative Vegan Recipe:
Vegan Banana Bread:
You will need:
*1 package of Simply Organic Banana Bread Mix
*Powdered Egg Replacer equivalent to two eggs
*3/4 Cup Warm Water
*2 Ripe Medium Bananas
Directions:
Preheat oven to 350 degrees F. In a large bowl, combine banana bread mix and egg replacer. Mix in water and bananas, mashed. Stir until just moist. Pour into lightly greased 9" x 4" loaf pan. Bake for 50 to 60 minutes, until center tests done with a toothpick or knife. May take 5 to 10 longer, depending on oven. Cool for 15 minutes in pan, then remove loaf from pan and finish cooling on rack. Cool completely as bread will slice better.
Prep time: 5 minutes.
Cook time: 50-60 minutes.
Serves: Makes 15 slices.
